Ingredients

Scale

Quesadilla Ingredients

  • 1 cup cooked black beans, drained and rinsed
  • 4 large flour tortillas
  • 1 1/2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil or cooking spray for cooking

Instructions

  1. Prepare the bean filling: In a bowl, combine the black beans with cumin, chili powder, garlic powder, onion powder, salt, and pepper. Mix well to evenly coat the beans with spices.
  2. Assemble the quesadillas: Place one tortilla flat on a clean surface or plate. Sprinkle a generous amount of shredded cheese evenly over the tortilla, then spread the seasoned black beans over half of the tortilla. Add a little more cheese on top of the beans to help everything stick together, then fold the tortilla in half to create a half-moon shape.
  3. Heat the skillet: Place a large non-stick skillet or frying pan over medium heat. Add a small amount of vegetable oil or lightly spray with cooking spray to prevent sticking.
  4. Cook the quesadillas: Carefully transfer the folded quesadilla to the hot skillet. Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and crispy and the cheese inside has melted. Use a spatula to flip and press slightly for even cooking.
  5. Serve: Remove the quesadilla from the skillet and let it rest for a minute. Cut into wedges and serve warm with salsa, sour cream, or guacamole if desired.

Notes

  • For vegan quesadillas, substitute cheese with vegan cheese alternatives or nutritional yeast.
  • Feel free to add other fillings like diced onions, bell peppers, or corn for extra flavor and texture.
  • Cook tortillas over medium heat to prevent burning while ensuring cheese melts thoroughly.
  • Leftover quesadillas can be stored in the refrigerator and reheated in a skillet or microwave.
