Scale

Main Ingredients

  • 16 ounces tortilla chips
  • 2 cups diced BBQ chicken
  • 8 ounces shredded cheddar cheese
  • 1 cup black beans (canned, drained and rinsed)
  • 1 cup corn (canned, drained)
  • ¼ cup BBQ sauce
  • 2 tablespoons chopped cilantro

Toppings

  • ¼ cup pico de gallo
  • ¼ cup guacamole
  • ¼ cup sour cream

Instructions

  1. Preheat Oven: Preheat your oven to 400˚F to get it ready for baking the nachos.
  2. Layer Ingredients: Spread the tortilla chips evenly across a baking sheet. Sprinkle half of the shredded cheddar cheese over the chips, then evenly distribute the diced BBQ chicken, black beans, and corn on top. Finish by adding the remaining shredded cheddar cheese on top.
  3. Bake Nachos: Place the assembled baking sheet in the preheated oven and bake for 8-12 minutes until the cheese is completely melted and the edges of the chips turn golden brown.
  4. Add Toppings: Once baked, remove the nachos from the oven and drizzle the BBQ sauce evenly over the top. Sprinkle chopped cilantro for freshness. Finally, add dollops of sour cream, guacamole, and pico de gallo either over the nachos or served on the side for dipping.

Notes

  • Use freshly cooked or leftover BBQ chicken for best flavor.
  • Feel free to substitute cheddar cheese with a cheese blend for extra flavor.
  • Serve immediately to enjoy the crunchy texture of the chips before they soften.
  • To make it spicy, add jalapeño slices or hot sauce.
  • This recipe can be easily doubled for larger gatherings.
