Ingredients

Scale

Main Ingredients

  • 2 cups BBQ Brisket (prepared and shredded)
  • 8 corn tortillas
  • 1 teaspoon vegetable oil

Toppings

  • 1/2 cup fresh cilantro
  • 1/4 cup shredded cheddar cheese (can substitute Mexican blend or colby jack)
  • 1/4 cup pico de gallo
  • 1/4 cup corn salsa
  • 1/4 cup sour cream
  • 8 fresh lime wedges

Instructions

  1. Warm the brisket: Heat the BBQ brisket using your preferred method such as microwave, stove top, or oven until it is warmed through and ready to serve.
  2. Toast the tortillas: Heat a few drops of vegetable oil in a skillet over medium-high heat. Once the oil is hot, place a corn tortilla in the skillet and cook for about 1 minute on each side, or until lightly browned. Repeat this process for all tortillas, adding more oil as needed. Using spray oil is a convenient alternative.
  3. Assemble the tacos: Lay the toasted tortillas flat on a plate. Add approximately 1/4 cup of warmed BBQ brisket to each tortilla. Then layer your preferred toppings in this order: cilantro, shredded cheese, followed by either pico de gallo or corn salsa, then sour cream. Finish each taco with a squeeze of fresh lime juice.
  4. Serve: Serve the tacos warm. Optionally, provide extra BBQ sauce or brisket jus on the side for dipping to enhance the flavor.

Notes

  • Use leftover BBQ brisket or prepare brisket ahead of time for best results.
  • For crispier tortillas, you can toast them longer, but be careful not to burn.
  • Feel free to swap cheddar cheese for Mexican blend or colby jack cheese according to preference.
  • Additional toppings like sliced jalapeños or avocado can add extra flavor and texture.
  • Serve with lime wedges to add a fresh citrusy brightness to the tacos.
