Bang Bang Sauce

  • 3 tablespoons mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 teaspoon sriracha sauce (adjust for spice preference)
  • 1 teaspoon lime juice

Instructions

  1. Prepare the Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, and lime juice. Mix well until smooth and set aside to let the flavors meld.
  2. Scramble the Eggs: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Pour in beaten eggs and scramble gently until just cooked. Remove from the pan and set aside.
  3. Sauté Vegetables: In the same skillet, add another tablespoon of vegetable oil. Add minced garlic and chopped onion, sautéing until fragrant and translucent. Then add diced mixed vegetables and cook for 3-4 minutes until tender-crisp.
  4. Fry the Rice: Add the cooked rice to the skillet with vegetables, stirring to combine and break up any clumps. Fry for about 5 minutes until the rice is heated through and slightly toasted.
  5. Combine Everything: Return the scrambled eggs to the pan and stir well into the rice and vegetables. Pour in the Bang Bang sauce and toss everything together until evenly coated and heated through, about 1-2 minutes.
