For the Baja Chicken

  • 4 cloves garlic (minced)
  • 2 teaspoons oregano
  • 2 teaspoons cumin
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 3 tablespoons cooking oil (divided)
  • 4 slices pepper jack cheese

For the Creamy Cilantro Sauce

  • ½ cup Greek yogurt
  • ½ cup salsa verde
  • ½ cup cilantro (about ½ bunch)
  • 1 tablespoon fresh lime juice (juice of about 1 lime)
  • 1 clove garlic

For the Sandwich Assembly

  • 4 brioche buns
  • 4 pieces leafy lettuce
  • 4 slices bacon (cooked to crispy)
  • 1 cup pico de gallo (prepared)
  • 1 avocado (sliced)

Instructions

  1. Preheat and prepare chicken: Preheat the oven to 350˚F. Cut the chicken breasts into sandwich-sized pieces, approximately 4 ounces each.
  2. Marinate the chicken: Place the chicken pieces in a zip-top bag or covered container. Add lime juice, orange juice, sliced jalapeños, minced garlic, oregano, cumin, salt, pepper, and half of the cooking oil. Mix thoroughly to ensure the chicken is fully coated. Refrigerate and let marinate for at least 20 minutes and up to 3 hours.
  3. Sear the chicken: Heat the remaining oil in a large oven-safe skillet over medium-high heat. Once hot, add the chicken pieces and sear the first side without moving for 2-3 minutes until golden brown. Flip and sear the other side for another 2-3 minutes.
  4. Bake the chicken with cheese: Transfer the skillet to the preheated oven and cook the chicken for 10 minutes. Then, place a slice of pepper jack cheese atop each chicken piece and return to the oven for up to 5 minutes, or until the chicken reaches an internal temperature of 165˚F and the cheese is melted.
  5. Make the creamy cilantro sauce: In a blender or food processor, combine Greek yogurt, salsa verde, cilantro, fresh lime juice, and garlic. Blend until smooth and creamy.
  6. Toast the buns (optional): Toast the brioche buns in the oven or on a skillet for added texture and flavor.
  7. Assemble the sandwiches: Start with the bottom half of each toasted bun, layer with leafy lettuce, then place the Baja chicken with melted pepper jack cheese. Add crispy bacon slices, pico de gallo, and sliced avocado.
  8. Add the sauce and top bun: Drizzle the creamy cilantro sauce over the sandwich filling or spread it on the top bun. Complete the sandwich by adding the top bun over the sauce.

  • Marinating the chicken for longer (up to 3 hours) will enhance the flavor and tenderness.
